Just like every year, we’re celebrating the deepest roots of our local cuisine, coinciding with one of our region’s most cherished events: the Santa Maria Maddalena Fair in Castelgomberto.
This historic cattle fair, a can’t-miss event for our town and the entire area, has been taking place since 1796. Even though livestock are no longer bought and sold, the fair has retained its charm as a traditional gathering and festive occasion.
And it’s precisely with this spirit of enhancing Venetian culinary heritage that, every year during the fair, our menu pays tribute to a dish that embodies the history, conviviality, and gastronomic mastery of our grandmothers: TRIPPE.

Let’s be honest, tripe isn’t for everyone. But for those who appreciate it, it’s a true triumph of flavors, a symphony of textures, and a dive into a past where nothing went to waste and every ingredient was valued to the fullest.
In our countryside, this dish was a pillar of peasant cuisine, a substantial and flavorful meal, often prepared on festive days or after strenuous days working in the fields. It was the symbol of “poor man’s cooking” transformed into a richness of taste, thanks to long cooking times and skillful combinations of aromatic herbs and vegetables.
In our Agriturismo’s kitchen, there has always been a strong passion for recovering and reintroducing these ancient recipes, reinterpreting them with a touch of innovation while preserving their authentic soul. For us, tripe is not just a dish, but a story: a story of tradition, patience, respect for raw ingredients, and wisdom passed down from generation to generation. It’s a dish that speaks of our agricultural history, our “no-waste” ethic, and our passion for true flavors – those that warm the heart and soul.

Our Interpretation: From Farm to Table
Our farm is the beating heart of everything we offer. We’re proud to cultivate most of the ingredients you find on your plate, ensuring a short supply chain and unparalleled freshness.
For our tripe, selecting the raw ingredients is fundamental to serving tender, flavorful tripe with an unmistakable taste. Our recipe begins with a long and meticulous cleaning of the tripe, an essential step to eliminate any impurities and guarantee an impeccable taste. This is followed by slow and patient cooking, a ritual that lasts for hours and allows the tripe to reach perfect tenderness. To this, we add a sauté of fresh vegetables cultivated in our garden – carrots, celery, onion – which give the dish a rich and deep aromatic base. We also include ripe tomatoes and a bouquet of aromatic herbs like bay leaves, rosemary, and sage, which enhance the flavor without overpowering it. Everything is deglazed with a good glass of local white wine, which adds a touch of acidity and complexity.
The result is an enveloping, flavorful dish that smells of home and tradition. Our tripe is an exaltation of tastes: the tenderness of the meat, the sweetness of the vegetables, the aroma of the herbs, and the slight acidic note of the tomato blend into a perfect balance, capable of conquering even the most demanding palates.
